The “Il Gazzolo” sausage factory, owned by Alberto Galloni and Figli, operates in the Langhirano area, located in Val Parma, the Valley of Food. The term “Gazzolo” derives from the Germanic language spoken by the Lombards and means “forest”, testifying to the fact that an oak grove extended along the banks of the stream. The Lombards were great breeders of pigs in the wild and the most important monasteries they founded measured their oak groves not by size, but by the thousands of pigs that could be fed by their acorns. It is, therefore, no coincidence that in this stretch of Val Parma characterized by optimal conditions of humidity and ventilation, intense pig breeding has today led to a thousand-year-old tradition of salting ham. Today as then, Il Gazzolo enhances the artisanal heritage linked to Parma Ham, bringing excellent production to the market.
